PASTA NON BASTA (Pasta is not enough): a new series of masterclasses to learn how to cook Italian products and celebrate Italian cuisine, now recognized as part of UNESCO’s Intangible Cultural Heritage.
The second encounter of the series is a Pasta Class: because, pasta can also be made at home… and if you didn’t know, you will learn with Executive Chef Riccardo Orfino, chef and partner of Osteria 57 restaurant, Travelers, Poets & Friends Food Production, Store and Dining, and Pamina Gelateria, New York.

In Italy, food is culture, ritual, storytelling: from the appetizer, which opens and stimulates the appetite, to the first course—the emblem of carbohydrate tradition—up to the second course of meat, fish, or other proteins, accompanied by side dishes of vegetables and greens. The journey concludes with dessert, coffee, and what all 20 Italian regions call by the same name: the “ammazzacaffè,” the digestif that seals the experience. Everything is enhanced by wines in their incredible variety of grape types, the highest in the world.
Pasta non basta was born precisely from this awareness: Italian cuisine is much more than one of its most well-known symbols. It is a vast, surprising universe deeply rooted in territories, histories, and flavors, along with the “knowledge” that every dish carries with it.
Through three monthly events at the Italian Cultural Institute of New York, the public will be guided on a journey of discovery that combines tradition and modernity. The meetings, structured as live show cooking, will place pasta in dialogue with other iconic dishes and ingredients of Italian cuisine, accompanied by a selection of wines designed to enhance their flavors and characteristics, presented by sommelier Alessandra Rotondi.
Under the banner of recognizing Italian cuisine as an intangible cultural heritage of humanity, this series presents itself as a sensory and cultural journey: an invitation to discover and recognize the authenticity, diversity, and richness of true Italy.
